Chinese style steamed scallops

Ingredients

  • 12 Half-Shelled Scallop from Clear Ocean
  • 1 Tbsp Chinese Cooking Wine
  • 50g – 70g Vermicelli
  • 8 Cloves Garlic
  • 1 Red Chilli Pepper
  • 3 Spring Onions
  • 2 Tbsp Light Soy Sauce
  • 3 Tsp Sesame Oil
  • Salt to Taste

 

Steps

  1. Soak the vermicelli in warm water for 15 – 20 minutes until soft, then drain.
  2. Finely chop the garlic, the white part of the spring onions and thinly slice chilli pepper.
  3. Remove the scallop meat from the shells, wash under cold running water.
  4. Place the meat in a bowl, add cooking wine and mix. Leave to marinade for 10 minutes.
  5. Clean the shells under cold running water.
  6. Heat 2 Tbsp of oil in a pan and sauté garlic until aromatic, add spring onion and stir fry for a minute.
  7. Remove pan from the heat. Add soy sauce, sesame oil and salt to your taste. Mix well to make the garlic oil.
  8. Place 1 liter of water the steamer.
  9. Place the amount of vermicelli to fill each shell, place into the steamer, then place the meat on top of each shell.
  10. Take 1 Tsp of the garlic oil and pour on top of the prepared scallops.
  11. Bring the water to the boil and then continue to steam for 8 minutes.
  12. Transfer onto a dish, garnish with spring onion and chilli, serve hot.
