Chinese style steamed scallops

Ingredients
- 12 Half-Shelled Scallop from Clear Ocean
- 1 Tbsp Chinese Cooking Wine
- 50g – 70g Vermicelli
- 8 Cloves Garlic
- 1 Red Chilli Pepper
- 3 Spring Onions
- 2 Tbsp Light Soy Sauce
- 3 Tsp Sesame Oil
- Salt to Taste
Steps
- Soak the vermicelli in warm water for 15 – 20 minutes until soft, then drain.
- Finely chop the garlic, the white part of the spring onions and thinly slice chilli pepper.
- Remove the scallop meat from the shells, wash under cold running water.
- Place the meat in a bowl, add cooking wine and mix. Leave to marinade for 10 minutes.
- Clean the shells under cold running water.
- Heat 2 Tbsp of oil in a pan and sauté garlic until aromatic, add spring onion and stir fry for a minute.
- Remove pan from the heat. Add soy sauce, sesame oil and salt to your taste. Mix well to make the garlic oil.
- Place 1 liter of water the steamer.
- Place the amount of vermicelli to fill each shell, place into the steamer, then place the meat on top of each shell.
- Take 1 Tsp of the garlic oil and pour on top of the prepared scallops.
- Bring the water to the boil and then continue to steam for 8 minutes.
- Transfer onto a dish, garnish with spring onion and chilli, serve hot.
